- 1 cup unsalted shelled pistachios
- ½ cup granulated sugar
- ¼ cup heavy cream
- 2 tbsp unsalted butter (softened)
- ½ tsp vanilla extract
- Pinch of salt
Blanch the pistachios by boiling them for 2–3 minutes, then draining and peeling off the skins.
In a food processor, blend the pistachios until finely ground.
Add sugar, vanilla extract, and a pinch of salt to the processor and blend until combined.
Gradually add the heavy cream and butter, blending until the mixture becomes smooth and creamy.
Transfer the pistachio cream to a jar or container. Allow it to cool if it has warmed during blending.
